Veal stew (meat very tender veal suited to long cooking)
1 white onion or bream
1 carrot (medium / large)
Celery
250 gr peas (frozen or fresh if in season)
1 thick slice of ham (optional)
Peppercorns (4 / 5)

Butter
Extra virgin
Flour or cornstarch or rice flour
1 cup dry white wine
vegetable stock or hot water
DIRECTIONS
Cut the meat cubes about 3 / 4 cm
Cut the slice of ham into small cubes (3 / 5 mm)
Finely chop carrots, onion and celery
Flour meat
Add the meat, ham with vegetables, add oil, butter, salt and pepper
Cook until the dog will not be well browned
Add wine and evaporate
Add the peas and the broth (a little at a time)
Continue cooking for about 1 hour
If you are too dry, add broth
Adjust salt, pepper (not much because the meat is delicate)
At the end add the thyme
