Slice of salmon fillet with pistachio

INGREDIENTS for 5 persons

Salmon fillet (select the central part is thicker than the part near the tail)
Pistachios, fresh (in Italy we have pistachios exceptional "pistachios of Bronte" pistachios from Sicily are very expensive but very good)
Butter
Salt and pepper
Mixed salad (radicchio red, Verbena, Rocket eccc ..)
2 oranges
Balsamic vinegar (5 years slightly sweet)
Extra virgin olive oil
DIRECTIONS
For the sauce with orange
Squeeze the orange
add balsamic vinegar (not too)
Oil, salt and pepper
Clean removes all the other orange cuticles and add the cloves in white sauce
Procedure
Skinned salmon and remove all bones (to understand where are the bones move your hand in the direction from tail to head) with tweezers
Cut the salmon steaks into the desired shape (I used a round shape which is normally used for biscuits)
Grind the pistachios with a mortar and cut into small pieces (but of a certain size)
Put a little 'of butter in a frying pan (nonstick) over high heat and allow to dissolve
Add the salmon fillets
Cook 3 / 4 minutes per side (until they are golden bell)
Add salt and pepper
Arrange on a plate with salad
Add (just over salad) dressing orange
Sprinkle with pistachios
