MEAT SAUCE

INGREDIENTS for 6 persons

1 onion large enough
1 carrot
1 stalk celery
250 gr. of ground beef (not lean Motl)
250 gr. minced pork meat
2 / 3 sausages
Dried mushrooms (optional)
3 / 4 cans of chopped tomatoes (if you have ever put a tin peeled tomatoes ain more) is very important to the quality of tomato pulp for that, if it is too watery, the sauce is just delicious
1 / 2 tube of tomato paste
2 glasses of red wine (a good wine. If you use a wine of poor quality dishes are affected)
Extra virgin olive oil
Butter
Broth (vegetable)
SPICES:
Clove (5 / 6)
Cinnamon stick (5 / 6 cm)
Peppercorns (10 grains)
Pepper
Juniper berries (4 / 5)
2 bay leaves
Parsley (optional)

DIRECTIONS
Cut into small pieces (I usually cut them very little ones, cubes of about 3 / 4 mm) onion, carrot and celery.
Add all the spices and herbs (if you add the parsley also be cut very thin), salt, pepper, olive oil and butter.
Cook until it will be well browned.
Meanwhile combine the two types of meat and sausages (beef and sausage mixed well with each other. It 'very important that they are otherwise well together during cooking will not be homogeneous). I advise you to leave off the meat and sausages frigorifermo at least an hour before the first because if the meat is too cold struggling to amalgamate the second because ... is terrible for your hands!
Combine the meat with the vegetables and cook until it will be well-roasted and dry (continues until the meat does not stick a little)
Add the wine and let evaporate
Add the tomato concentrate and do cook for another 5 minutes
Finally add the tomato.
Lower the heat to low and continue cooking for about 2 / 3 hours.
Mescalte from time to time and if you notice that the sauce is too thick add the broth (if sometimes the water, but hot)
The sauce will be ready when it will be reduced by about one third will have a very intense color

If you want to add the dried mushrooms, you have to put them in warm water for about 30-40 minutes and add the middle with their cooking water (filtered)
