Apples with vanilla with cannoli and rosemary A TAVOLA

INGREDIENTS

Ingredients for 4 servings:
For the wafer cannoli:
1.20 ounces of flour
4.40 ounces of sugar
0.35 ounces of cocoa
3.5 oz butter, melted

For the cream of the cannoli:
4.40 oz cream
7 ounces white chocolate flakes
5.20 ounces of whipped cream
1 sheet gelatin
chopped rosemary

For the sorbet:
4 apples grammy smith
syrup (made by boiling sugar and water in equal quantities)

For the stewed apples:
2 golden apples
1.70 oz caster sugar
1 vanilla bean
lemon juice

DIRECTIONS
Preparation:
For the wafer:
