RABBIT ...in PASTRY with mushrooms sauce and asparagus

EQUIPMENT Knife, Cutting Board, baking tray, No-Stick paper, Brush, Bowl, Pan
CATEGORY Rabbit


INGREDIENTS
(4/5 persons)
Half Rabbit (Headless)
2 Small Sweet Onions (White)
Mix Mushrooms (Porcini, Champignon...) 1/2 Kg. (1 Lib)
Salt
Pepper
Dill
Extravergin Olive Oil
2 Eggs + 1 yolk
Fresh Ricotta or another fresh creamy cheese
Puff Pastry
Flour
Asparagus (4/5 each persons)
DIRECTIONS
Cut the onions in very thin
Cut the rabbit in 5/6 pieces
Flour the rabbit.
Put in a pan the onions, Rabbit and 4 tablespoon of Extravergin oil and 1 Tablespoon of butter
Salt and pepper
Cover and start to cook (medium fire)
Cook till the rabbit comes golden color (attention to do not burn the onions. If need, add a little bit of water)
At this point add the mushrooms and to cook till the sauce is dense (mix occasionally. Just for don't stick.)
Stop the fire.
Take off the rabbit from the pan and wait till is cold.
Cut the meat in small pieces (2 cm)
Put in the bowl the meat, Fresh Cheese, 2 Eggs and eventually salt, pepper and Dill.
Roll out the Puff Pastry amd put the mix inside
Close very well the pastry and brush with the yolk
Baked for 25/30 min (medium temperature).
Served warm or cold with the mushrooms souce
Asparagus:
Steam in microwawe for 6 min.
Cut and close with fresh chives

With a some drop of Balsamic Vinegar is fantastic
