Pecorino Toscano
DIRECTIONS
Prepare the emulsion with olive oil, balsamic vinegar and salt and basil
Balsamic vinegar a few drops are enough (the real balsamic vinegar is pretty sweet).
Combine all ingredients and season with the emulsion at the end add the chives. The Tuscan pecorino in the salad you can add or leave separate.
