White rice with zucchini, bacon, olives (Taggiasche from Liguria) and Dill

TIME COOK: 7 min (Given time without the preparation of the rice)
EQUIPMENT: 1 pot, knife, colander, a non-stick pan, cutting board, paper towels, dish for microwave

INGREDIENTS x person
1 cup of rice
half zucchini
1 tablespoon olive
2 slices of bacon
a pinch of dill (fresh if the poet better!)
1 tablespoon extra virgin olive oil
Coarse sea salt
1 Litre of water
DIRECTIONS
Boil the water with little salt (2 tablespoons)
Put the rice and cook (cooking time depends on the rice you are using)
Meanwhile, cut the zucchini into very thin slices (5 mm)
Cook (for 5 / 7 minutes) on high heat with olives, a pinch of salt and dill.
Meanwhile, place the slices of bacon between two sheets of paper towels. Put in the microwave until it is crisp.
Drain the rice and season it with the zucchini slices and crumbled bacon.
Alternatively, you can add the bacon cut into small strips when cook the zucchini. I prefer the microwave is lighter and gives it a nice crunchy contrast to the tenderness of zucchini.
