INGREDIENTS
(4/5 persons)
Muscle or beef stew meat (500 gr. 17 ounces)
1 bottle of Chianti (or full-bodied red wine and dry)
1 or 2 tablespoons peppercorns
2 cloves garlic
1 onion (white or yellow)
1 liter of vegetable broth (see recipe)
Pepper
Sale
Extra virgin Oil
Tomato paste 1/2 spoons
Flour (it's OK to the cornstarch or rice flour) (this ingredient is not present in the original recipe is my own addition, so if you want you can not use)


DIRECTIONS
Clean and cut the meat into cubes about 3 / 4 cm

Place in a pan with garlic and onion, pepper, juniper berries and extra virgin
Fry the meat well and add salt
Add the bottle of wine and tomato paste
Cook on very low heat with lid, stirring occasionally for about 3 hours.
Add the broth during cooking if you notice that the sauce is too dry
Off and adjust salt and pepper.
The best thing is to serve the next day accompanied by grilled bread, potatoes or white beans

you can start cooking on the fire directly and when you add the wine, bring the pot (so it must be a suitable pot roast) into the oven cover with foil and cook over very low temperature for 3 hours.
