INGREDIENTS for 5 persons
700 Kg of mushrooms (fresh!) (1,5 libbers) or frozen (Cantharellus and or Porcini and or champignone)
Butter
Extravergin Olive Oil
Salt
Fresh persil
Nipitella (Calamintha nepeta)
Garlic
Broth (vegetal)
1 onion (yellow or white)
1 potato
DIRECTIONS
Clean the mushrooms (with Mushroom Brush and wte sponge)
slice the onion and potato into strips (very thin)
chopped the mushrooms in medium size
Slice the Persil, Nipitella very thin
Cut the garlic in 2 o 3 pieces
Add the extravergin oil, butter, salt and pepper
cover the pan
Braising for 10/15 minutes (whe start to stik) after add the broth and cook for 45min /1 hours
